Step by step recipe
The secret to perfect julienne lies in proper preparation. Boil the chicken until tender, chop finely, and sauté mushrooms with onions until golden. Sour cream adds silkiness, while hard cheese creates an irresistible golden crust. Bake in cocotte dishes or foil molds until bubbly and golden. Follow our steps for a restaurant-quality julienne at home.

Cook the Chicken
Cover the chicken fillet with water, bring to a boil, skim foam, and cook for 15-20 minutes until tender. Cool and dice finely.

Sauté Mushrooms and Onion
Clean and chop mushrooms. Peel and chop onion. Heat oil in a skillet, sauté onion until translucent, add mushrooms and cook until golden and liquid has evaporated.

Combine Filling
Add diced chicken to the mushrooms, stir and heat for 2 minutes. Pour in sour cream, season with salt and pepper, mix well, and remove from heat.

Fill the Molds
Prepare cocotte dishes or foil molds. Divide the mixture among the molds, filling about 2/3 full. Top with grated cheese.

Bake
Preheat oven to 180°C (350°F). Place molds on a baking sheet and bake for 15-20 minutes until the cheese is golden and bubbly.

Serve
Serve hot directly in the molds, garnished with fresh herbs. Enjoy!

Choose Aromatic Wild Mushrooms
Wild mushrooms (porcini, boletus, chanterelles) give the richest flavor. If unavailable, button mushrooms or oyster mushrooms work, but the taste will be milder.
Don't Overcook the Chicken
Boil chicken breast for 15-20 minutes until just tender. Cool and dice easily. Chicken thighs can also be used for extra juiciness.
Sour Cream for Creaminess
Use 15-20% fat sour cream to prevent curdling during baking. A sprinkle of flour can thicken the sauce, though not necessary here.
Cheese Crust Perfection
Grate hard cheese coarsely and sprinkle on top 5 minutes before the end of baking to melt and brown without burning.

HOW TO STORE
How to Store Chicken and Mushroom Julienne
Cool the julienne in the molds, cover, and refrigerate for up to 2 days. Reheat in the oven at 160°C (320°F) for 10-15 minutes or in the microwave. Freezing is not recommended as the sour cream sauce may separate.
