The key to tender stuffed squid is to avoid overcooking the seafood. Cook the mushroom omelette only until the eggs are set, then let the filling cool slightly before stuffing the squid. Do not pack the filling too tightly, as the squid will shrink slightly during baking. Secure each stuffed squid with toothpicks and brush with a thin layer of vegetable oil. Bake at 200°C until cooked through, then cool completely before slicing so the filling stays neatly inside.

Prepare the filling ingredients
Slice the mushrooms, finely chop the dill and grate the semi-hard cheese. Keep the ingredients ready so the filling can be assembled quickly once the mushrooms are cooked.

Cook the mushrooms
Heat the vegetable oil in a skillet over medium heat. Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until tender and most of their released moisture has evaporated.

Make the mushroom omelette
Beat the eggs directly into the skillet with the mushrooms. Season with salt and spices, then stir gently with a spatula for about 3 minutes, until the egg mixture is set but still tender.

Finish the filling

Stuff the squid
Fill the cleaned squid bodies with the mushroom-and-omelette mixture, taking care not to pack them too tightly. Secure each opening with a toothpick to prevent the filling from escaping.

Bake the stuffed squid

Secure the opening
