Sauté a diced onion in oil, then add the liver cut into 2–3 pieces and cook for about 7 minutes, stirring occasionally.
Transfer the liver to a baking dish, season with salt and pepper, and sprinkle with chopped herbs and garlic. Top with diced tomatoes and grated cheese.
Place the dish in a preheated oven and bake until the cheese melts.
