Recipe preparation

Place the bacon in a skillet and fry on both sides. Then add sliced red onion (half rings) and chopped tomato to the bacon.

Beat the eggs with a splash of water, season with salt, and pour over the bacon and vegetables. Sprinkle with spices—curry, sweet and hot red pepper, garlic pepper, and oregano. Cover with a lid and cook over low heat for about 10 minutes.

When ready, sprinkle with grated cheese, just enough so it doesn’t fully melt.
