The secret is properly cooked squid: boil them for just 2-3 minutes in salted water — any longer and they become rubbery. Hard-boil the eggs and grate the cheese coarsely. Dice all ingredients to the same size for a harmonious texture. Dress with mayonnaise just before serving.

Cook the Squid and Eggs
Hard-boil the eggs (10 minutes), cool, and peel. Boil the squid in salted water for 2-3 minutes, then cool in cold water.

Chop Squid and Eggs
Dice the squid and eggs into small, even cubes.

Grate the Cheese
Grate the cheese coarsely.

Mix and Dress
In a salad bowl, combine the squid, eggs, and cheese. Add mayonnaise and toss gently to coat.
