Recipe preparation

Grate cheese.

Divide the eggs into white and yolk, grate.

Mix cheese with egg yolk.

Boil shrimps in salted water for 3-5 minutes, cool and peel.

For the sauce, combine the quail eggs, sweetener, salt and mustard, beat with a mixer for 1 minute.

Without stopping whisking, add vegetable oil in a thin stream.

Beat until firm and soft.

Add lime juice, chopped herbs and ground pepper.

Put the salad on a serving plate, make a "snow pillow" from the egg white.

Top with some cheese with yolk and garnish with shrimps.

Drizzle with lime juice, sprinkle with zest.

Serve the sauce separately.
