The key to these rolls is perfectly fried eggplant. Slice them lengthwise into thin strips, salt and let sit for 10 minutes to remove bitterness. Fry over medium heat until golden on both sides, then transfer to paper towels to drain excess oil. The filling should be smooth and spreadable — mix cheese with mayonnaise and garlic well. Roll them tightly so they stay closed.
