SIMPLE PROCESS
Step by step recipe
The key to this meat pizza is getting the meat crust right – use a mix of beef and pork for richness, and add egg and cream for binding and moisture. Sauté the mushrooms and onions beforehand to remove excess liquid, preventing a watery pizza. A thin layer of sour cream and tomato paste adds tangy depth. Bake until the cheese is bubbly and golden for the perfect finish.

Prepare the Meat Crust
In a large bowl, combine ground beef (250 g / 8.8 oz) and ground pork (250 g / 8.8 oz). Add the egg (55 g / 1 large), cream (100 ml / ½ cup), salt (2 g / ½ tsp), and pepper to taste. Mix until just combined – do not overwork.

Press into the Baking Pan
Grease a baking dish or line with parchment. Press the meat mixture evenly into the bottom, forming a 1 cm (½-inch) thick layer with slight edges.

Spread the Sauce
Mix 2 tbsp sour cream with 1 tbsp tomato paste (optional) and spread a thin layer over the meat crust.

Sauté and Arrange the Toppings
Slice mushrooms (200 g / 7 oz) and onion (30 g / 1 oz). Sauté in a skillet until golden, about 5–7 minutes. Distribute them evenly over the crust. Halve cherry tomatoes (100 g / 3.5 oz) and scatter on top.

Top with Cheese and Bake
Sprinkle with grated cheese (150 g / 5.3 oz). Bake in a preheated oven at 190°C (375°F) for 30–35 minutes until the cheese is bubbly and golden brown.

Rest and Serve
Remove from the oven, let rest for 5 minutes, then slice and serve warm with fresh herbs or a green salad.
CHEF'S TIP
Choose Quality Ground Meat
A blend of ground beef and pork gives the best flavor and moisture. You can use ground chicken or turkey, but add a bit more cream to keep it from drying out.
Don't Overmix the Meat
Mix until just combined – overworking the meat can make the crust dense and tough. The cream and egg should be at room temperature for better incorporation.
Sauté Mushrooms and Onions Well
Cook them until golden and all liquid evaporates – this concentrates flavor and prevents the pizza from becoming soggy.
Rest Before Slicing
Let the pizza rest in the pan for 5–7 minutes after baking. This allows the juices to redistribute and makes slicing much easier.
SUBSTITUTIONS
Add your taste
- Replace Mixed Meat with Ground Turkey or Chicken Use 500 g (1 lb) ground turkey or chicken for a leaner version. Add 2 tbsp olive oil to keep it moist.
- No Mushrooms? Try Zucchini or Eggplant If you're not a mushroom fan, use diced zucchini or eggplant – sauté them first until tender.
- Swap Sour Cream for a Creamy Sauce Instead of sour cream and tomato paste, brush the crust with 100 ml heavy cream mixed with a pinch of nutmeg for a rich, creamy flavor.
- Add Olives or Sun-Dried Tomatoes Top with sliced olives or chopped sun-dried tomatoes along with cherry tomatoes for a Mediterranean twist.
