SIMPLE PROCESS
Step by step recipe
To achieve crispy outsides and tender insides, prep the zucchini correctly: grate coarsely and squeeze out excess moisture. Cheese and garlic add a savory punch, while the egg binds everything together. Pan-fry over medium heat until golden — your perfect breakfast is ready.

Prep the Zucchini
Peel the zucchini, grate coarsely, salt, and let sit for 5–10 minutes. Then squeeze out excess liquid through a sieve or cheesecloth.

Add Egg, Cheese, and Garlic
In a bowl, combine the zucchini with the egg, finely grated cheese, minced garlic, pepper, and any other spices. Mix well until uniform.

Heat the Skillet
Place a skillet over medium heat, add a little vegetable oil, and heat thoroughly.

Shape the Fritters
Using a tablespoon, drop portions of the batter onto the skillet, gently flattening them into rounds.

Fry
Cook for 2–3 minutes per side until golden brown. Flip carefully with a spatula.

Serve
Transfer the cooked fritters to paper towels to absorb extra oil. Serve hot with sour cream or your favorite dip. Enjoy!
CHEF'S TIP
Remove Excess Moisture
After grating the zucchini, salt it and let sit for 5–10 minutes, then squeeze out the liquid through a sieve or cheesecloth. This prevents the fritters from falling apart and makes them crispier.
Choose a Melting Cheese
Use a semi-hard cheese like Gouda, Edam, or a similar variety that melts well. It gives the fritters a creamy texture and a golden crust.
Don't Overcook
Fry over medium heat for 2–3 minutes per side until golden. High heat burns the outside, while low heat makes them soggy.
Serve with Sour Cream or Sauce
Classic sour cream is great, but a herb-yogurt dip or tomato sauce also works wonderfully.
SUBSTITUTIONS
Add your taste
- Use Zucchini (Green) Instead Green zucchini is firmer and less watery, so the fritters will be more compact and won't need much squeezing.
- Herbs Instead of Garlic If you're not a fan of garlic, skip it and add chopped dill or parsley for a fresh, herby flavor.
- Add Flour for Firmness If the batter is too runny, stir in 1–2 tablespoons of flour or cornstarch — the fritters will hold their shape better.
- Bake in the Oven Place the fritters on a parchment-lined baking sheet, brush with oil, and bake at 200°C (400°F) for 15–20 minutes until golden — a lighter option.
