The secret to this soup is the smoked ribs, which infuse the broth with their rich, smoky essence. Simmer them with the vegetables, then blend the cabbage into a silky purée, while the meat is shredded and returned to the pot. Sautéed carrots and onions add sweetness and depth. Don't overcook the cabbage to preserve its vibrant color and nutritional value.

Prepare the base
Cover the smoked ribs (350 g / 12.3 oz) with water (2 L / 8.5 cups) and bring to a boil. Skim off foam, reduce heat, and simmer for 30 minutes.

Cook the cabbage
Add cauliflower (500 g / 17.6 oz) and broccoli (500 g / 17.6 oz) florets to the broth. Cook for 10–15 minutes until tender.

Sauté the vegetables
In a separate pan, sauté chopped onion (40 g / 1.4 oz) and carrot (40 g / 1.4 oz) until golden.

Purée and finish
Remove the ribs, separate the meat from the bones. Purée the cabbage with some broth using an immersion blender. Return the meat to the soup, add the sautéed vegetables, season with salt and pepper, and warm through for 5 minutes before serving.
