Step by step recipe
The key to this dish is proper meat cutting: slice the pork into thick pieces but not all the way through, creating a fan-like shape. The marinade of mayonnaise and mustard with sweetener not only adds zest but also keeps the meat incredibly moist. Cut the vegetables into uniform slices so they cook evenly. Baking covered traps steam to tenderize the meat, then removing the lid gives you that irresistible golden finish.

Prepare the Meat
Cut the pork (800 g / 1.8 lb) crosswise into thick slices (about ¾ inch / 2 cm) but stop short of cutting through, leaving about ½ inch (1 cm) at the bottom – forming a fan. Season with salt and pepper.

Make the Sauce
In a bowl, mix mayonnaise (400 g / 1.5 cups), mustard (10 g / 2 tsp), sweetener (1 g / pinch), salt (2 g / ½ tsp), and your favorite spices until smooth.

Marinate the Meat
Generously coat the pork with the sauce, getting between the slices. Let it marinate at room temperature for at least 30 minutes (or up to 2 hours in the fridge).

Prep the Vegetables
Slice the eggplant (500 g / 1.1 lb) into ½-inch (1 cm) thick slices, bell peppers (450 g / 1 lb) into rings or strips, and onion (150 g / 5.3 oz) into rings. Lightly salt them.

Assemble the Fan
Insert slices of eggplant, pepper, and onion between the layers of pork to form a beautiful fan. Transfer the meat to an oiled baking dish (with 20 g / 1.5 tbsp olive oil).

Bake
Cover the dish with a lid or foil and bake in a preheated oven at 200°C (400°F) for 25 minutes. Then remove the cover and bake for another 15–20 minutes until the top is golden and crispy. Let rest for 10 minutes before serving.

Choose the Right Cut of Pork
Boneless pork loin or shoulder works best. Look for meat with a bit of marbling – it stays juicy and tender during roasting.
Don't Overcook
Keep an eye on the time. If the top starts to burn, cover with foil. The internal temperature should reach 160–165°F (70–75°C) for perfectly cooked pork.
Marinate for at Least 30 Minutes
For the best flavor, let the meat sit in the marinade at room temperature for at least 30 minutes, or up to 2 hours in the fridge.
Slice Veggies Evenly
Cut eggplant, peppers, and onions into slices of similar thickness (about ½ inch / 1 cm) to ensure they cook uniformly and don't stay raw.
