Dorado 1pc (400-500g)

gutted, stuffed with lemon and green basil, parsley, a clove of garlic, salt, sprinkle with olive oil and lemon juice.

Top with rings of red onion, lemon and add 3-4 shrimps.

steam in a double boiler for 20 minutes

Sauce - olive oil + lemon juice + balsamic sauce + chopped herbs.

Free the hot fish from bones and skin, pour over the sauce.
