Recipe preparation

Cut the eggplants into two parts and carefully cut out the middle.

Finely chop the onion, pass the garlic through a press and fry in olive oil

Finely chop the eggplant pulp and also send it to the pan.

We simmer for three minutes. We remove from the fire.

Cut the tomato and hard-boiled eggs.

Then add to the filling, send some greens and 50 gr. grated cheese.

Mix everything, salt, pepper, season to taste.

Fill the eggplant halves with the filling.

Sprinkle them with grated cheese and send them baked in the oven for 20-30 minutes.

Cover the top with foil for 15 minutes so that the cheese does not burn.
