Step by step recipe
The key to a tender chicken and mushroom loaf is creating a smooth, evenly blended mixture and spreading it evenly in the baking dish. Cut the chicken into small pieces before blending so the food processor or blender can break everything down consistently. Line the baking dish with parchment paper and avoid adding extra liquid, since mushrooms naturally release moisture. Slow baking allows the loaf to cook gently and develop a firm but tender texture. Let it rest after baking before slicing so the loaf can set properly.

Prepare the ingredients
Rinse and thoroughly dry the chicken, then cut it into small pieces. Clean and chop the mushrooms, and cut the onion into smaller pieces. Have the eggs ready so they are not ice-cold when added.

Blend the mixture
Place the chicken, mushrooms, and onion in a blender or food processor. Add the eggs, salt, and spices. Blend until the mixture is as smooth and uniform as possible, with no large pieces remaining.

Prepare the baking dish

Keep the layer even

- Other mushrooms Button mushrooms can be replaced with oyster mushrooms or a mixture of fresh mushrooms. Make sure they are fresh and not excessively wet before blending.

How to Store Chicken and Mushroom Loaf
Let the baked loaf cool to room temperature, but do not leave it out for more than 2 hours. Transfer it to an airtight container or wrap it tightly and refrigerate for up to 3 days. Individual slices can be reheated in the microwave or covered in the oven to help prevent them from drying out. The loaf can also be frozen in individual portions for up to 1 month. Thaw it in the refrigerator and reheat thoroughly before serving.
