The secret to this dish is evenly pounded chicken and a cheesy crust that stays put. Pound the breast to an even thickness for consistent cooking. The garlic mayo adds flavor and moisture, while thick cheese slices melt into a golden "cap" without running off. Bake the meat first, then add tomatoes and cheese for a perfect finish.

Prep the chicken breast
Rinse the chicken breast (200 g / 7 oz) and pat dry. Cover with plastic wrap and pound to ½-inch (1–1.5 cm) thickness on both sides.

Make the sauce
In a bowl, mix mayonnaise (40 g / 2.5 tbsp) with minced garlic (3 g / 1 clove). Stir until smooth.

Coat and bake
Place the chicken in a baking dish (or on foil). Spread the sauce evenly on top. Bake in a preheated oven at 200°C (400°F) for 15 minutes.

Add tomatoes and cheese
Remove from oven. Slice tomatoes (100 g / 3.5 oz) into rounds and cheese (100 g / 3.5 oz) into thick rectangles. Arrange them over the chicken.

Finish baking
Return to the oven for another 5–10 minutes until the cheese is melted and golden. Let rest for 5 minutes before serving.
