SIMPLE PROCESS
Step by step recipe
For tender fritters, blend the liver and onion until the mixture is as smooth as possible. Add the eggs afterward and blend again so the batter becomes evenly combined. A heavy-bottomed skillet works best because it distributes heat evenly and helps the fritters cook without added oil.

Blend the onion
Peel 50 g of onion and place it in a blender. Blend until finely and evenly minced. The more thoroughly the onion is blended, the smoother the fritter mixture will be.

Blend the liver
Prepare 500 g of beef liver by removing large membranes and tough connective tissue, then cut it into smaller pieces. Add the liver to the onion and blend until you have a smooth, fairly fluid mixture.

Add the eggs and mayonnaise
Add 165 g of chicken egg and 40 g of mayonnaise to the liver mixture. Blend again until completely smooth and evenly combined. The finished mixture should be loose enough to spoon into the skillet.

Preheat the skillet
Place a heavy-bottomed skillet over medium heat and let it heat thoroughly. No additional oil is required for the original recipe, so make sure your skillet is suitable for cooking without oil.

Cook the fritters
Spoon small portions of the liver mixture onto the hot skillet, forming neat fritters. Cook until the liver changes color, then carefully turn each fritter and continue cooking.

Finish cooking
Once the liver has completely changed color, cook the fritters for at least another minute. Make sure there is no raw liver mixture in the center, then remove the fritters and serve hot.

Choose fresh liver
For tender fritters, use fresh beef liver with an even texture and no strong unpleasant odor. Remove any large membranes and tough connective tissue before blending.
Blend until smooth
The smoother the liver mixture, the more delicate the finished fritters will be. Blend the onion and liver thoroughly, then blend again after adding the eggs.
Use a heavy-bottomed skillet
A heavy skillet holds heat more evenly and helps the fritters cook without added oil. Make sure the skillet is properly preheated before adding the batter.
Don't overcook the liver
Once the liver changes color, continue cooking for at least another minute as directed. Avoid significantly extending the cooking time so the fritters stay tender.

Add your taste
- Chicken liver Beef liver can be replaced with chicken liver in the same amount. The fritters will have a milder flavor and a particularly tender texture.
- Pork liver For a deeper, more robust flavor, pork liver can be used in the same amount. Clean it carefully and remove membranes and tough connective tissue before blending.
- Adjust the onion You can slightly adjust the amount of onion to suit your taste while keeping the same preparation method. Onion helps soften the strong liver flavor and adds moisture.
- Skip the mayonnaise The mayonnaise can be omitted if you prefer not to use it. However, the original nutritional values include 40 g of mayonnaise, so removing or replacing it will change the calories and macros.

How to Store Beef Liver Fritters
Let the cooked fritters cool completely, then transfer them to an airtight container. Refrigerate for up to 3 days. Reheat thoroughly in the microwave, skillet, or oven before serving. To prevent the fritters from drying out, cover them when reheating in the oven. The cooked fritters can also be frozen in airtight packaging, then thawed in the refrigerator and thoroughly reheated before serving.
