SIMPLE PROCESS
Step by step recipe
The key to a delicious green radish salad is removing excess moisture and sharpness from the radish. Grate it, squeeze it thoroughly, and, if needed, rinse it briefly with cold water before squeezing again. Cook the chicken just until tender and let it cool completely before mixing. For the best texture, cut the ingredients into small, similar-sized pieces. Add the mayonnaise shortly before serving so the radish stays pleasantly crisp and the salad does not become watery.

Cook the chicken
Boil the chicken breast in lightly salted water until fully cooked. Depending on its size, this usually takes about 15–20 minutes after the water comes to a boil. Cool the chicken and cut it into small pieces.

Prepare the radish
Peel the green radish, grate it using a coarse grater, and squeeze out as much excess juice as possible. This reduces bitterness and keeps the finished salad from becoming watery.

Chop the remaining ingredients
Finely chop the onion. Cut the smoked sausage into small cubes. Peel the hard-boiled eggs and cut them into similarly sized cubes.

Combine the salad
Place the chicken, squeezed radish, onion, sausage, and eggs in a large bowl. Mix gently so the ingredients stay intact and evenly distributed.

Add the dressing
Add the mayonnaise and gently toss until all ingredients are evenly coated. Taste before adding extra salt, since the sausage and mayonnaise may already provide enough seasoning.

Chill and serve
Refrigerate the salad for 10–15 minutes before serving so the flavors can blend. Serve chilled as an appetizer, side dish, or light main course.
CHEF'S TIP
Tame the radish flavor
Grate the green radish, lightly salt it, and squeeze out the released juice. This reduces its sharpness and gives the salad a smoother, more balanced flavor.
Keep the chicken juicy
Cook the chicken breast over moderate heat just until fully cooked, then let it cool in the cooking liquid. This helps keep the meat tender and moist.
Cool before mixing
Make sure the eggs and chicken are completely cool before adding the mayonnaise. Warm ingredients can thin the dressing and make the salad watery.
Add dressing gradually
Start with part of the mayonnaise, mix the salad, and add more only if needed. This keeps the finished dish creamy without making it overly heavy.
SUBSTITUTIONS
Add your taste
- Lighten the dressing Replace some or all of the mayonnaise with plain yogurt. The dressing will be lighter and have a pleasant fresh tang.
- Skip the sausage Omit the smoked sausage and use more chicken breast if desired. The salad will have a milder flavor and a more protein-focused profile.
- Make it milder If the radish is particularly spicy, rinse the grated radish briefly with cold water and squeeze it well before adding it to the salad.
- Use another green radish The Margelan green radish can be replaced with another mild green radish with a similar crisp, juicy texture.
HOW TO STORE
How to Store Green Radish Chicken Salad
Store the finished salad in a tightly covered container in the refrigerator at up to 4°C. For the best texture and flavor, eat it within 24 hours, as the radish gradually releases moisture into the dressing. Stir gently before serving. Freezing is not recommended because the radish and eggs will lose their pleasant texture after thawing.
