The key to these boats is proper zucchini prep. Scoop out the flesh carefully, leaving sturdy walls to hold the filling. Use the scooped flesh in the filling for extra moisture. Sauté the vegetables to release their aroma without overcooking. Capers and oregano add a Mediterranean touch. Bake at 180°C (350°F) for 20–25 minutes until the cheese melts and forms a golden crust.

Cut 150 g (about 2 small) zucchini in half lengthwise. Scoop out the flesh with a teaspoon, leaving walls about ½ inch (1 cm) thick to form boats. Set the flesh aside for the filling.

Finely chop the zucchini flesh, onion (30 g / 1 oz), garlic (10 g / 2 cloves), and tomato (80 g / 2.8 oz). Sauté in a skillet with a little oil until soft (5–7 minutes). Season with salt, pepper, oregano, add capers (15 g / 1 tbsp) and grated Parmesan (40 g / 1.4 oz). Mix well.

Choose firm, straight zucchini

Select medium-sized zucchini of even thickness, without blemishes. They should be firm to hold their shape after baking.

Scoop out the centre carefully

Use a teaspoon to remove the flesh, leaving walls about ½ inch (1 cm) thick. Too thin and they may collapse; too thick and they may stay undercooked.

Sauté the filling until tender

Cook the onion, garlic, and tomatoes until soft but not mushy. This preserves texture and releases maximum flavour.

Don't overfill the boats

Fill them generously but don't pack too tightly – otherwise, juices may escape and the filling could dry out.

How to Store Baked Zucchini Boats

Cool the boats completely, then store in an airtight container in the fridge for up to 2 days. Reheat in the oven at 160°C (320°F) for 7–10 minutes or in the microwave. Freezing is not recommended – zucchini becomes watery and loses texture upon thawing.
