The secret to a great solyanka is balancing salty, sour, and savory elements. Use meat on the bone for a flavorful broth, and don't skip the smoky bacon and pickles — they give the soup its signature character. The sauté of onion, carrot, and tomato paste deepens the color and flavor, while olives and garlic add a final zing. Serve with lemon and sour cream for the full experience. Follow these steps for a soup that tastes like it's been simmering all day.

Make the Broth
Cut the pork into cubes. Cover with water (2 liters), bring to a boil, skim off foam, and simmer over medium heat for 30–40 minutes until the meat is tender.

Prepare the Sauté
Finely chop the onion and garlic, grate the carrot. In a skillet, sauté the onion until translucent, add the carrot, then stir in the tomato paste and cook for 2 minutes.

Add Pickles and Smoked Meat
Dice the pickles and slice the smoked bacon into strips. Add them to the broth along with the sautéed vegetables. Simmer for 10 minutes.

Add Olives and Seasonings
Slice the olives (or leave whole) and add to the soup with the minced garlic, salt, and spices. Cook for another 5 minutes.
