To get a perfect roll, sauté the mushrooms until golden and aromatic. Cook the omelet in butter until lightly browned on both sides, then let it cool slightly for easy rolling. Spread the ricotta-mushroom filling along one edge and roll it up carefully. Follow these steps for a restaurant-quality dish.

Sauté the Mushrooms
Slice the mushrooms, mince the garlic. Melt butter in a skillet, add mushrooms and garlic, and sauté for 5 minutes until golden and the liquid has evaporated. Season with salt and pepper. Remove from heat and let cool.

Make the Filling
In a bowl, combine the cooled mushrooms with ricotta and chopped parsley. Season with salt and mix until smooth.

Cook the Omelet
