Recipe preparation
Fry the zucchini in rings until golden brown.
Chop and fry half of the carrot and half of the onion.
Put the zucchini in a deep plate, top with carrots and onions, tomato rings, crushed garlic and herbs.
Cover with a plate and press for two hours in the cold.
Drain off excess oil and serve.
