Step by step recipe
The key to this moussaka is proper eggplant prep. Slice them, salt generously, and let sit for 15–20 minutes to draw out bitterness. Then squeeze and fry until golden – they become soft and flavorful. Cook the vegetable filling separately: sauté onion, carrot, celery, and pepper until tender, then add tomatoes and herbs. Layer half the eggplants in a baking dish, add the vegetables, top with remaining eggplants. The sour cream-egg topping adds a golden, creamy finish. Bake until set – and you’re ready to impress!

Prep the eggplants
Slice the eggplants (800 g) into 1 cm (½ inch) rounds. Sprinkle with salt and leave for 15–20 minutes, then rinse, squeeze, and pat dry.

Fry the eggplant slices
Heat vegetable oil in a skillet and fry the slices until golden on both sides (2–3 minutes per side). Drain on paper towels.

Make the vegetable filling
Chop the onion (150 g) into half-rings, carrot (150 g) into cubes, celery (15 g) finely, and bell pepper (150 g) into strips. Sauté in a separate pan until soft (5–7 minutes). Add chopped tomatoes (250 g), minced garlic (2 cloves), and chopped parsley, simmer for 5 more minutes. Season with salt.

Assemble the moussaka
In a baking dish, place half the eggplant slices in a single layer. Spread all the vegetable filling on top. Cover with the remaining eggplant slices.

Prepare the topping
In a bowl, whisk eggs (165 g) with sour cream (200 g), add chopped parsley and a pinch of salt. Pour this mixture evenly over the assembled layers.

Bake until golden
Bake in a preheated oven at 190°C (375°F) for 40–50 minutes, until the top is golden and the filling is set. Let rest for 10–15 minutes before serving.

Remove bitterness from eggplant
Always salt the sliced eggplant and let it rest – this removes bitterness and excess moisture, preventing the slices from soaking up too much oil.
Fry until golden
Fry the eggplant slices over medium heat until golden on both sides – this gives a deeper flavour and keeps them firm during baking.
Don't overcook the vegetable filling
Cook the vegetables just until tender-crisp so they retain their texture and individual taste in the final dish. Add tomatoes at the very end.
Topping with sour cream and eggs
Whisk the sour cream and eggs until smooth, stir in fresh herbs. Pour over the layers before baking – it creates a silky, golden crust.
SUBSTITUTIONS
Add your taste
- Replace sour cream with Greek yogurt For a lighter version, use Greek yogurt instead of sour cream – it’s lower in fat but still creamy and tangy.
- Eggplant → zucchini or summer squash If you don’t have eggplant, use zucchini – they don’t need salting and cook faster, with a milder flavour.
- Add cheese for extra richness Sprinkle grated mozzarella or cheddar on top 10 minutes before the end for a gooey, golden cheese crust.
- Egg-free (vegan version) Replace eggs with 100 ml of plant-based cream mixed with 1 tbsp cornstarch – it thickens the topping without eggs.

How to Store Bulgarian Moussaka
Let the moussaka cool completely, then cover with foil or transfer to an airtight container. Refrigerate for up to 3 days. Reheat in the oven at 160°C (320°F) for 10–15 minutes or in the microwave. Freeze in portion-sized containers for up to 1 month. Thaw in the fridge and reheat in the oven – the flavour holds up well.
