Step by step recipe
For tender, flavorful eggplant, start by halving it lengthwise, making deep crosswise cuts in the flesh, and salting the halves. After 20–30 minutes, rinse and gently squeeze them to remove excess moisture and some of the natural bitterness. When scooping out the flesh, leave sturdy walls so the eggplant boats keep their shape during baking. Prepare the filling separately: sauté the onion and pork, then cook the mushrooms and eggplant flesh until tender. Layer the filling into the boats, then finish with sour cream, cheese, and fresh herbs. Baking at 200 °C quickly heats the filling while creating a delicious melted cheese topping.

Prepare the eggplant
Cut the eggplants lengthwise into two halves. Use a sharp knife to make deep crosswise cuts in the flesh without cutting through the skin. Sprinkle with salt and leave for 20–30 minutes to draw out excess moisture and reduce bitterness.

Rinse and make the boats
Rinse the eggplant halves to remove the salt and gently squeeze out excess moisture. Carefully scoop out the flesh with a spoon, leaving sturdy walls and bottoms. Finely chop the removed flesh and reserve it for the filling.

Cook the meat filling
Dice the onion finely. Heat the olive oil and sauté the onion until golden. Add the ground pork and cook for about 20 minutes, stirring occasionally and breaking up larger pieces. Season with salt and spices toward the end.

Sauté the mushrooms and eggplant
Clean the mushrooms and cut them into small cubes. Sauté them in olive oil for about 5–7 minutes, until excess moisture has evaporated. Separately, sauté the chopped eggplant flesh for another 5–7 minutes until tender.

Fill the eggplant boats
Arrange the eggplant boats in a baking dish. Layer the cooked pork, sautéed eggplant flesh, and mushrooms into each half. Distribute the filling evenly without packing it down too tightly.

Bake with garlic and cheese
Mince the garlic and sprinkle it over the filled eggplants. Bake at 200 °C for about 10 minutes. Then spoon sour cream over the top and finish with grated semi-hard cheese and finely chopped parsley and dill. Return to the oven for another 10 minutes, until the cheese is melted and lightly golden.

Always rinse the eggplant after salting and gently squeeze out excess moisture. This removes extra salt and helps mellow the characteristic bitterness.
Leave sturdy eggplant walls
Do not scoop out all of the flesh when making the boats. Leaving enough flesh around the sides and bottom prevents them from collapsing during baking.
Brown the pork thoroughly
Cook the pork with onion for about 20 minutes, breaking up larger pieces as it cooks. The filling should be fully cooked and develop a rich, savory aroma.
Watch the cheese closely

- Use a leaner ground meat Replace the pork with ground chicken or turkey for a lighter filling. The cooking time may vary slightly depending on the meat and its texture.
- Try different mushrooms Button mushrooms can be replaced with oyster mushrooms or another suitable edible mushroom. Cut them into small pieces and sauté until excess moisture has evaporated.
- Choose another melting cheese The semi-hard cheese can be replaced with another variety that melts well and develops a golden crust. The final flavor will depend on the cheese you choose.
- Make the topping creamier For an even softer topping, you can use a little more sour cream. This will make the finished dish creamier and give the cheese layer a softer texture.

How to Store Stuffed Eggplant
Cool the finished stuffed eggplants and transfer them to an airtight container. Refrigerate at 4 °C or below for up to 2–3 days. Reheat portions in the oven or microwave until thoroughly hot. For a fresh-looking cheese topping, reheat in an oven at around 180 °C. The dish can be frozen, although the eggplant may become softer and the sour cream layer can change texture after thawing. Thaw gradually in the refrigerator, then reheat thoroughly before serving.
